Tater Tot Egg Bake

I love cooking with my family, but to get one on one time to cook with either of my kids is priceless.  Such a bonding experience.  My son, Joseph is really good in the kitchen, I’ve taught him well.  Haha.  This was the perfect dish to make with him, although he does make a lot of dishes, but this one has eggs in it, which is a favorite.  I know that when he has a family he definitely will be able to cook for them.

These are so versatile using any breakfast meats, veggies from your refrigerator and cheese and load it up.  These can be frozen or refrigerated and heated in microwave for a minute and eaten on the way out of the door.

Tatot Tot Egg Bake

Delicious mini muffin sized egg bakes.

Ingredients

  • 36 Tater Tots 3 for each cup in muffin tin
  • 2 Precooked Sausage Patties Diced
  • 2 Cups Vegetables Diced
  • 8 OZ Cheddar Cheese Shredded
  • 1/4 Cup milk
  • 8 eggs
  • Salt & Pepper to taste
  • 1 TBS oil

Instructions

  • Preheat oven to 400 degrees.
  • Spray each muffin tin cup with cooking spray.
  • Put 3 tater tots in each muffin tin cup.
  • Smash tater tots flat in cups using a small plastic measuring cup.
  • Place in oven for 10 minutes.
  • At this time, sautee your vegetables until tender.
  • Cut your cooked breakfast meat into small pieces.
  • Grate your cheese.
  • Lower oven to 350 degrees.
  • Cover tater tots with veggies and meat.
  • Whisk together 8 eggs in a bowl adding milk, salt, and pepper.
  • Pour egg mixture over vegetables and meat. Add cheese on top.
  • Cook for 20 minutes until eggs are cooked through.
  • Use a spoon to pop out. ENJOY!!
