Banana Pudding Cake Pie

A favorite banana pudding recipe loaded between cake layers in a pie shell. Oh yeah.

Ingredients

Cake

  • 1 box cake mix (yellow, white, or vanilla)
  • 1 cup milk
  • 1/2 cup butter melted
  • 3 large eggs, room temperature

Pudding

  • 1 (5.1oz) box vanilla or banana instant pudding or pie filling
  • 2 cups cold milk

Whipped Topping

  • 16oz heavy whipping cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Other Ingredients

  • 1 9 inch precooked pie crust (shortbread, graham cracker)
  • 3-4 medium bananas sliced (coat in lemon juice or other citrus fruit to prevent browning)

Instructions

  • Prepare and bake cake per the instructions on back of cake mix box for 2 (8' or 9') cake pans. (I substitute milk for the water and substitute butter for the oil. This makes a moist bakery style cake.) Also make sure to flour your pans after spray with a non-stick cooking spray.
  • Allow cakes to cool in pans for 10 minutes before removing cakes and placing them on a wire rack to cool completely.
  • While cakes are baking, prepare pudding: Place pudding and 2 cups of milk into a medium bowl and beat using an electric hand mixer or by hand until reaching a thick pudding like consistency. (The back of the pudding box will say to use 3 cups of milk, please only use 2 cups of milk so it holds better within the dessert.
  • Cover and refrigerate pudding until cakes are cooled.
  • While cakes are baking and cooling, prepare the whipped topping: (You may use frozen cool whip, thawed, instead of making homemade whipped topping. In a large bowl place 2 cups of heavy whipping cream, 1 cup powdered sugar and 1 tsp vanilla extract. Using a whisk attachment on an electric hand mixer, whisk until stiff peaks have formed. Cover and place in refrigerator until ready to use.
  • Once cakes have cooled, using a serated knife trim off the top of cake that may be rounded. (another tip: if you used 9 inch cake pans, trim some of the outside edge from around the cakes so they can fit into pie crust.
  • In the pie crust, evenly distribute 1/2 of the pudding mixture. Cut 1 banana into slices and evenly place onto pudding layer. Place 3 TBS of whipped topping to cover bananas lightly.
  • Place one cake on top of whipped topping. Evenly distribute the rest of pudding mixture on top of cake. Cut another banana into slices and evenly place onto the pudding layer. Place 3 TBS of whipped topping to cover bananas lightly.
  • Place 2nd cake on top of the whipped topping. Cover the entire top of cake and sides with the rest of whipped topping. Place a layer of sliced bananas on top for decoration.
  • Make sure this dessert is refrigerated.
