BBQ CHICKEN PIZZA ROLL UPS

An easy lunch or dinner recipe using cooked chicken, refrigerated pizza dough, cheese, onion, bacon, and favorite bbq sauce. These will WOW everyone.

Equipment

Ingredients

  • 1 (13.8oz) tube refrigerated pizza crust
  • 1 1/2 – 2 cups diced cooked chicken (I used a rotisserie chicken)
  • 1/2 cup barbecue sauce (your favorite flavor)
  • 2 cups monterey jack cheese shredded (divided)
  • 1/2 red onion, diced (or any type of onion)
  • 3-4 pcs cooked crisp bacon, crumbled into pieces
  • flour, to dust work surface when rolling out dough
  • dried parsley, for garnishing

Instructions

  • On a clean work surface, sprinkle a little flour. Roll out the pizza dough. Using a rolling pin roll out dough to the size of 10" x 18".
  • Spread barbecue sauce all over the surface of dough. Leave a 1/2" edge around the dough clean.
  • Evenly spread cooked chicken, red onion, cooked bacon, and 1 1/2 cups cheese all over the sauce leaving the 1/2" edging free of any toppings.
  • Start from the long edge near you and roll the dough all the way to the other long edge of dough to make a tubular shape. Seal any seams and both edges.
  • Using a sharp knife cut the tubular shape in half. Cut those 2 halves into halves. Should have 4 pieces. Cut those 4 in halves. Now you should have 8 total roll ups.
  • Place onto a greased or parchment lined baking pan. Bake in 400 degree preheated oven for 20 minutes. Place additional cheese on top of the roll ups and bake another 5 minutes until cheese is melted and pizza dough is cooked through.
    Sprinkle with parsley and enjoy.
