Beef Enchiladas with Chili Gravy

Ingredients

  • 2 lbs Ground Beef
  • 1 yellow onion, chopped
  • 1 TBS cooking oil
  • 6 TBS taco seasoning
  • 2 (15oz) cans chili no beans
  • 1 can Water
  • 16 oorn tortillas
  • 8 oz shredded mexican or cheddar cheese
  • 3-4 green onions, sliced or cilantro if desired for garnish

Instructions

  • Preheat oven to 350 degrees.
  • In a large skillet heat 1 TBS cooking oil over medium high heat. Add onions and ground beef. Cook until meat is browned and onions are soft. Add in taco seasoning and mix well. Turn off burner.
  • In small skillet add both cans of chili and water. Heat to warm up. Turn off burner.
  • Take one tortilla and place into chili mixture to cover the top and bottom to soften tortilla. Place onto a place. Add 2 TBS of the meat mixture and 1 TBS of shredded cheese in center of tortilla. Roll tortilla over mixture and cheese and tuck in and roll to other end. Place in a 9x13 baking dish seam side down. Finish rest of tortillas. Pour rest of chili mixture over enchiladas. Sprinkle rest of cheese over enchiladas. Add extra chopped onions if desired.
  • Place in preheated oven and cook for 15-20 minutes until cheese is melted and sauce is bubbly. Garnish with green onions or cilantro.
