Broccoli Cheese Casserole
The perfect side dish using broccoli & cheese with a delicious creamy mixture to pull it all together.

Ingredients
- 4-5 cups chopped fresh broccoli
- 1 (10.5oz) can cream of celery soup
- 1 cup mayonnaise
- 2 large eggs, beaten slightly
- 1/4 medium yellow onion, diced fine
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 oz sharp cheddar cheese (DIVIDED)
- 1/2 sleeve Ritz crackers, crushed
- 1/4 cup melted butter
Instructions
- Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray and set aside.
- Place chopped fresh broccoli in a microwave safe bowl, add 2 TBS water, cover tightly with plastic wrap, and steam for 2 minutes in microwave. Remove and set aside.NOTE: you can steam broccoli for 5 minutes in a sauce pan on stove top for 3-5 minutes until tender. Drain.
- In a large mixing bowl mix together soup, mayonnaise, eggs, onions, salt & pepper. Stir in 8 oz cheddar cheese. Mix in drained broccoli until well coated.
- Pour broccoli mixture into prepared baking dish. Top with remaining 4 oz cheddar cheese.
- In a small bowl mix together melted butter and Ritz cracker crumbs and sprinkle on top of broccoli mixture.
- Bake in preheated oven for 30 minutes until cheese is melted and topping is golden.
