Cinnamon Sugar Donut Bread

Tastes like a sweet donut coated with cinnamon and sugar. A delicious treat for anytime.

Equipment

  • 9" x 5" x 3" loaf pan
  • large mixing bowl
  • medium mixing bowl
  • small mixing bowl
  • spatula and wire whisk
  • 2 pie plates

Ingredients

  • 1 cup white granulated sugar
  • 1/4 cup butter, softened
  • 1/4 cup canola oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup buttermilk
  • 1/2 tsp ground cinnamon
  • 1/2 tsp molasses or dark corn syrup

Coating

  • 1/2 cup butter, melted
  • 1/4 cup white granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 tsp ground cinnamon

Instructions

  • Spray an "9 x 5" x 3" loaf pan with non-stick cooking spray. Set aside. Preheat oven to 350 degrees.
  • In a large mixing bowl whisk together sugar, oil, and softened butter. Add in eggs and vanilla and whisk until combined.
  • In a medium bowl whisk together flour, baking powder and salt. Add 1/2 of the dry mix into the wet batter. Pour in half of the buttermilk. Mix all together. Add in the remainder of the dry mix into the wet batter. Pour in the remainder of the buttermilk into the batter. Stir until well combined.
  • Remove 1/2 cup of the batter and put into a small bowl. Stir in cinnamon and molasses until combined.
  • Pour 1/2 of the regular batter into the prepared loaf pan and spread evenly. Dollop 3 TBS of the cinnamon and molasses mixture on top of the regular batter in loaf pan. Pour remainder of regular batter on top of the cinnamon molasses batter in loaf pan and spread evenly. Dollop remainder of the cinnamon molasses mixture on top of the regular batter in loaf pan.
  • Using a butter knife, swirl all layers together. Place in preheated oven for 45-50 minutes. Place a toothpick in center of cake to test for doneness. Remove cake from oven and allow to cool in the pan for 10 minutes.
  • Meanwhile, place 1 cup melted butter into a pie plate. In a different pie plate whisk together brown sugar, white granulated sugar, and cinnamon. (These ingredients are listed in the "Coating" ingredients above.)
  • Remove cake carefully from loaf pan and place into the pie plate with the melted butter. Turn the cake onto all sides coating the sides with the melted butter. Use a spoon to pour melted butter on the top of cake.
  • Place cake into pie plate with the sugar mixture and turn onto all sides coating the sides with the sugar. Place cake back into loaf pan and dust with leftover sugar mixture. Slice and enjoy.
