Coca-Cola Meatballs

Delicious tender meatballs full of flavor, one of which happens to be coca-cola which gives a little sweetness to the meatballs. You have to try these.

Equipment

  • large skillet
  • large mixing bowl
  • 9 x 13 baking dish
  • cooking spray

Ingredients

  • 1 1/2 – 2 lbs ground beef
  • 1/4 cup panko or bread crumbs
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 1/2 yellow onion, diced small (DIVIDED)
  • 1 green bell pepper, diced small (DIVIDED
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 3 tsp Worcestershire sauce (DIVIDED)
  • 1 (10.5) oz can tomato soup or tomato sauce
  • 1/4 cup beef broth
  • 8 oz coca-cola soft drink
  • 2 TBS butter
  • 2 tsp minced garlic

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Set aside.
  • In large mixing bowl combine ground beef, panko crumbs, egg, 1 tsp Worcestershire sauce, milk, 1/2 of the diced onion, 1/2 of the diced bell pepper, garlic powder, salt & pepper
    NOTE: save other 1/2 of onion & bell pepper for sauce.
  • Roll ground beef mixture into 1 1/2 TBS size rounded balls. Heat 2 TBS butter in large skillet. Add meatballs into hot skillet and brown on all sides. Place browned meatballs, drained into prepared baking dish.
  • Remove any excess grease leaving 1 TBS in same skillet over medium heat. Add rest of the diced onion and bell pepper. Lightly season with salt & pepper. Cook for 2 minutes. Stir in tomato soup, broth, 2 tsp Worcestershire sauce, and minced garlic, Turn off heat. Add coca-cola and stir. Taste mixture and season with salt & pepper to taste.
  • Pour sauce over meatballs. Place baking dish into preheated oven for 1 hour until meatballs are fully cooked and sauce is bubbly. Serve over mashed potatoes, pasta or rice.

    Very good. I used 2 lbs of ground beef & tomato sauce then baked it in a metal pan in our toaster oven. I served with rice. My husband wanted more sauce so next time I’ll double the sauce. My mother also liked it. I want to make it again & freeze in portions. Thank you for your great recipes.
