Costco Copycat Chicken Bake

Ingredients

  • 1 (13.8oz) tube refrigerated pizza dough (rectangular shape)
  • 2 cups chopped cooked chicken (rotisserie, canned, bake, etc.)
  • 6-8 slices cooked & crisp bacon, crumbled
  • 2 cups Italian blend shredded cheese (DIVIDED)
  • 1 1/4 cups Caesar salad dressing (DIVIDED)

Instructions

  • Preheat oven to 400 degrees. Spray a large sheet pan with non-stick cooking spray or cover with a piece of parchment paper. Set aside.
  • In a large mixing bowl combine diced cooked chicken, crumbled cooked bacon, 1 1/2 cups Italian cheese, and 1 cup Caesar dressing.
  • Lightly flour a clean work surface and roll out pizza dough to thin it out. Cut into 4 equal pieces.
  • Divide the chicken mixture equally between the four pieces of dough. Starting with the long side closest to you, bring edge of dough up and over mixture. Bring the other long side of dough up to other side and pinch both long edges together. Close the side edges together at each end to form a log shape. Place seam side down onto prepared sheet pan. Repeat with the other 3 pieces.
  • Brush remaining Caesar dressing on the tops and sides of each chicken bake. Sprinkle the tops with the remaining Italian cheese.
  • Bake in preheated oven for 15-20 minutes until golden brown. Allow to cool for a few minutes and enjoy.
