Dirty Cabbage & Ground Beef Recipe
Easy low Carb version of Dirty Rice or Spaghetti. One skillet 30 minute meal.
Equipment
- cutting board & sharp knife
- large deep skillet with lid
- measuring cups & spoons
- spatula or wooden spoon
Ingredients
- 14 oz kielbasa or other type of link sausage, cut into round disk shapes
- 1 lb ground beef
- 2 TBS cooking oil
- 1/2 medium red bell pepper, diced
- 1/2 medium green bell pepper, diced
- 1 medium yellow onion, diced
- 2 tsp minced garlic
- 1 TBS tomato paste
- 2 cups beef broth
- 1/4 – 1/2 tsp (each) salt, black pepper, garlic powder, onion powder, chili powder, and smoked paprika
- 1 TBS Worcestershire sauce
- 1 head green cabbage, chopped into bite size pieces
- 4 TBS water
- 2 TBS corn starch
Instructions
- Heat oil in large deep skillet over medium high heat. Add in sliced sausage and cook on both sides until golden and crispy on the edges. Remove to a plate and set aside.NOTE: substitute turkey sausage, cajun type of sausage or beef sausage linked sausage.
- Add ground beef to same skillet. Break up the beef and brown over medium high heat until cooked through and no longer pink.
- Add in diced peppers and onions and stir until softened. Stir in garlic for 1 minute.
- Stir in tomato paste, all seasonings, beef broth & Worcestershire. Add sausage back into skillet. Bring to a boil over high heat. (Taste for additional seasonings, if needed.)
- Stir in chopped cabbage in batches until it starts to wilt. Lower heat and cover skillet with a lid for 10 minutes until cabbage is tender.
- In a small bowl, whisk corn starch and water together. Pour slurry into Dirty Cabbage and stir until sauce is thickened. Enjoy.
