Fruit Cookie Pizza 4th of July Flag
A delicious cookie with a yummy topping, fruit and a glaze pulling it all together. Happy 4th of July.
Equipment
- large sheet pan (I used 11×17) any size will work
Ingredients
- 2 (16oz) tubes sugar cookie refrigerated dough
- 2 (8oz) boxes cream cheese, room temperature
- 1/2 – 1 cup powdered sugar
- 1 tsp vanilla
- 1-2 pints blueberries
- 16-32 oz strawberries, sliced lengthwise
- 3 TBS orange marmalade or jelly
- 1 (8oz) can prepared whipped topping (or make homemade whipped topping to pipe onto cookie).
Instructions
- Take cookie dough our of wrappings and cut into 1/4 inch thick slices. Place slices in a single layer covering cookie sheet. (NOTE: You do not need to grease pan if non-stick.) Press dough slices together forming one large cookie form. Press up the sides for a crust.
- Bake cookie per instructions found on cookie dough package. Allow cookie to cool completely.
- In a medium bowl using an electric hand mixer beat cream cheese until creamy (1 minute). Slowly add in powdered sugar 1/4 cup at a time. (NOTE: You can add 1/2 cup total or go up to 1 cup for a more sweet taste.) Blend in vanilla extract.
- Dollop cream cheese mixture on top of cooled cookie. Evenly spread mixture to cover entire cookie.
- Using a knife, draw a rectangle into mixture at top of cookie. Fill rectangle with blueberries in straight lines. Place strawberries in a line starting from the edge of the blueberries and finish at edge of cookie. Leave a space in between your lines of strawberries. Once you have your strawberries in lines, fill the lines in between the strawberries with piped whipped topping.
- Melt orange marmalade in a microwave safe small bowl in the microwave for 10-15 seconds. Using a pastry brush, coat the blueberries and strawberries with the marmalade. This adds a delicious citrusy taste and gives it a nice shine. Due to the cream cheese, make sure to refrigerate before serving and any leftover portions. Enjoy.
