Frito Pie Casserole

Ingredients

  • 1 medium onion, chopped
  • 1- 1/2 lbs ground beef
  • 1 packet taco seasoning check out my recipe for homemade taco seasoning
  • 1 (10oz) can, frozen, or fresh corn
  • 1 (4oz) can diced green chilis
  • 1 (14oz) can diced tomatoes
  • 3/4 cup sour cream
  • 4 cups Fritos corn chips, divided
  • 2 cups shredded cheese, divided (I used mexican blend
  • 1/4 cup salsa
  • 1 TBS cooking oil
  • 3-4 green onions, sliced, for garnish

Instructions

  • Preheat oven to 350 degrees.
  • In large skillet, heat oil on medium high heat. Cook onions until soft. Add ground beef and cook until browned. Turn off burner and drain any excess grease.
  • Add taco seasoning, corn, green chilis, diced tomatoes, sour cream, and salsa. Stir until all combined.
  • In a 9x13 baking dish place 1/2 of the meat mixture and smooth evenly. Top with 1/2 of the Fritos evenly. Sprinkle with 1 cup of the shredded cheese.
  • Repeat with rest of the meat mixture, top with remaining Fritos, and sprinkle with 1 cup of shredded cheese.
  • Place in preheated oven uncovered for 15-20 minutes until cheese is melted.
  • Garnish with sliced green onions.
