Fritos Cowboy Cabbage Ground Beef Casserole

Equipment

  • large deep skillet with lid
  • spatula
  • cutting board & sharp knife
  • measuring cups & spoons

Ingredients

  • 1 lb ground beef
  • 4 cups chopped green cabbage
  • 1 (10oz) can mild rotel tomatoes
  • 2 cups Fritos chorn chips
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced
  • 1 pkt taco seasoning (3 TBS)
  • 1 (14oz) canned corn, drained
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • salt & black pepper, to taste
  • sliced green onions, garnish

Instructions

  • In a large deep skillet over medium high heat, break up and brown ground beef. Drain excess grease.
  • Stir in onion and bell pepper and cook until softened.
  • Stir in rotel tomatoes, drained canned corn and taco seasoning. Season with salt & black pepper, if needed. Simmer for 5 minutes.
  • Add in chopped cabbage and stir until well coated. Place lid on and simmer until cabbage is tender.
  • Remove from heat. Top with shredded cheese, Fritos, and green onions. Place lid back on until cheese has melted. Enjoy.

  • Thank you for printing the recipe. My Wife is already thinking of changing it. Adding beans and mushrooms. Doubling or tripling comes to mind.
