Talk abut the most simple, easy, delicious, colorful, fresh looking Greek Pasta Salad. I use a Tzatziki Sauce from Trader Joe’s but you can certainly make your own. Dive into this one.2
Greek Pasta Salad
Ingredients
- 2 cups cherry tomatoes
- 1 cucumber
- 2 cloves garlic minced
- 3 TBS parsley
- 1/2 red onion
- 2 cups lettuce
- 1/2 cup calamata olives sliced
- 1 cup tzatziki sauce
- 1 lb farfella pasta
- 1/2 tsp pepper
- 1/2 tsp salt
- 2 tsp white sugar
- 1/3 cup olive oil
- 3 TBS red wine vinegar
- 8 oz Feta Cheese Crumbles
Instructions
- Cook pasta per instructions, drain, and allow to cool.
- Prepare vegetables. De-seed cucumber and cut in half moon shapes. Slice cherry tomatoes in half. Rough chop 1/2 head of lettuce. Finely chop parsley.
- Slice olives in half. Dice 1/2 red onion.
- In small bowl combine tzatziki sauce, garlic, olive oil, vinegar, sugar, salt and pepper with a whisk.
- Combine pasta, vegetables, and dressing in a large bowl to coat well.
- Serve at once or allow to chill in refrigerator for up to 3 days.
