

Ground Beef Lombardi Casserole
A Comforting Hearty Weeknight Meal.
Equipment

- 9 x 13 baking dish
- measuring spoons & cups
- large pot
- cheese grater
Ingredients
- 1 lb ground beef
- 1 (14.5 oz) can diced tomatoes with juice
- 1/2 medium yellow onion, diced
- 1 (10 oz) can rotel tomatoes with juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 (12 oz) package egg noodles or other type of pasta
- 1 cup sour cream
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup parmesan cheese, shredded
- fresh parsley as garnish
Instructions
- Preheat oven to 350 degrees. Grease or butter a 9 x 13 baking dish.
- Bring a large pot of water to a boil. Add 2 tsp salt to water. Add egg noodles and cook until al dente per directions on back of package. Drain and place back in pot.
- Add sour cream to cooked & drained noodles and stir to coat all noodles with sour cream. Place sour cream coated noodles into bottom of prepared baking dish.
- While pasta is cooking, break up and brown ground beef and onion in a medium skillet over medium high heat until ground is no longer pink and cooked through. Drain excess grease from skillet.
- Into the cooked ground beef and onion, stir in diced tomatoes with juice, rotel with juice, and the seasonings (1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp salt, 1/4 tsp black pepper). Let simmer for 15 minutes.
- Pour ground beef mixture over the noodles in baking dish. DO NOT STIR.
- Grate the 3 cheeses and sprinkle on top of the meat mixture. DO NOT STIR.
- Bake uncovered in preheated oven for 15-20 minutes until cheese has melted and golden brown.
- Garnish with fresh parsley as a garnish and enjoy.
