Hot Chocolate Cookies

What else do you need for a cold day then hot chocolate?  How about hot chocolate in a cookie.  Yes, I did.  Talk about delicious.  Check these out.

Hot Chocolate Cookies

Ingredients

  • 4 (1) oz hot chocolate packets 1 cup
  • 1 cup unsalted butter room temperature
  • 1 cup white sugar
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 1/4 cup all purpose flour
  • 1 1/4 tsp salt
  • 1 1/4 tsp baking soda
  • 1 cup milk chocolate chips
  • 1 cup semi weet chocolate chips
  • 1 1/2 cup mini marshmallows

Instructions

  • Preheat oven to 350 degrees.
  • Using a hand mixer or a stand mixer, cream together butter & both sugars until smooth.
  • Beat in eggs and vanilla until well combined.
  • In a separate bowl, whisk together flour, hot chocolate, salt & baking soda.
  • Add flour mixture to wet ingredients slowly until combined. (Dough will be thick).
  • Fold in chips.
  • Make balls out of the dough about 1 1/2 TBS each. Place onto parchment lined baking sheets.
  • Place 3-4 marshmallows onto the center of cookie dough.
  • Bake for 10-12 minutes until edges are golden brown.
  • Let cool for 5 minutes before removing from pans.
  • Enjoy!
