  • 3 TBS cooking oil
  • 1 1/2 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried oregano
  • 1/4 tsp basil
  • 1/4 tsp parsley
  • 1/4 tsp paprika

Instructions

  • Combine all seasonings in a shallow bowl. Coat chicken on both sides in the seasoning mix.
  • Turn Instant Pot to Sautee mode and let heat up. Add cooking oil, let heat up to a sizzle.
  • Place chicken breast in instant pot and brown on each side for 3-4 minutes each side.
  • Pull chicken out and set aside. (if you have more chicken to brown go ahead and do in batches.)
  • Add chicken broth to instant pot and scrape the bottom of pan to deglaze and remove all stuck on bits. Leave bits in pan as it adds flavor. Cancel sautee mode.
  • Place trivet in instant pot making sure to leave chicken broth in the instant pot.
  • Place browned chicken on trivet.
  • Place lid on instant pot and lock into place. Put instant pot onto pressure cooker and set time to 5 minutes.. After 5 minutes is up do a Natural Release for 5 minutes. Then do a quick release.
  • Once all steam is released and the pin on back of unit drops, it is now safe to remove lid away from yourself.
  • Remove chicken and trivet. Now you are able to slice, chop, or shred chicken.
  • The broth in the instant pot can be thickened with a corn starch slurry and made into a gravy.
