Equipment

  • Rolling Pin
  • sharp knife
  • medium skillet
  • large sheet pan
  • parchment paper
  • pastry brush
  • small bowl
  • tin foil

Ingredients

This recipe makes 2 calzones

  • 1 (13.8oz) tube refrigerated pizza dough crust
  • flour for dusting work surface
  • 2 TBS marinara sauce
  • 1/2 cup mozzarella cheese
  • 12-14 slices pepperoni
  • 4 slices deli genoa salami
  • 1/2 cup cooked ground italian sausage
  • 1/4 tsp italian seasoning
  • 1/8 tsp salt
  • 1/8 tsp garlic powder
  • 1 tsp water
  • 1 large egg

Instructions

  • Preheat oven to 375 degrees. Line large sheet pan with parchment paper. Lightly dust work surface with flour. Remove pizza dough from tube and place on prepared work surface. Cut dough in half and set one of the halves aside.
  • Using a rolling pin roll out dough into a 7 or 8 inch circle (doesn't have to be perfect).
  • Spread 1 TBS sauce on half of the circle. (Leave a 1 inch border for sealing later.) Sprinkle a few TBS of mozzarella cheese on sauce.
  • Place 1/2 of the pepperoni on the cheese. Sprinkle with cheese. Top with cooked sausage. Top with cheese. Top with salami. Top with cheese.
NOTE: Basically we put a little cheese between each layer of meat and on top and below. (5 layers of cheese).
  • Fold the empty side of the dough over the meats and cheese and pinch edges together. You can crimp edges with a fork to seal also. Place each prepared calzone onto the parchment lined sheet pan.
  • Whisk water and egg together until frothy. Brush the egg wash on the tops and sides of calzones.
  • Sprinkle the tops of the egg washed calzone with Italian seasoning, salt, and garlic powder.
  • Loosely tent foil over calzones. Place in preheated oven for 15 minutes. Remove foil and bake an additional 15 minutes or so until golden brown. Crust should be crispy and crunchy on top.
  • Let cool for a few minutes. Serve up with favorite marinara sauce and a tossed salad, if desired.
