One of my triple summer salads. I love macaroni salad and how simple it is and how versatile it is using my many colored peppers from my garden. Adds a vibrancy.
Macaroni Salad
Ingredients
- 1/2 LB Elbow Macaroni cooked, cooked and chilled
- 1/2 Stalk Celery diced
- 1/2 small yellow or red onion minced
- 1/2 Pepper (any color) minced
- 3/4 Cup Mayonaise
- 1 TBS White Vinegar
- 1/2 tsp yellow mustard
- Salt & Pepper to taste
- 2 Hard Boiled Eggs
Instructions
- Mix together macaroni, celery, onion, and peppers.
- Combine mayonnaise, vinegar, mustard, salt and pepper.
- More mayonnaise mixture onto macaroni mixture and stir together.
- Garnish with cooked eggs.
- Serve and Enjoy!
