Macaroni Salad

One of my triple summer salads.  I love macaroni salad and how simple it is and how versatile it is using my many colored peppers from my garden.  Adds a vibrancy.

Macaroni Salad

Ingredients

  • 1/2 LB Elbow Macaroni cooked, cooked and chilled
  • 1/2 Stalk Celery diced
  • 1/2 small yellow or red onion minced
  • 1/2 Pepper (any color) minced
  • 3/4 Cup Mayonaise
  • 1 TBS White Vinegar
  • 1/2 tsp yellow mustard
  • Salt & Pepper to taste
  • 2 Hard Boiled Eggs

Instructions

  • Mix together macaroni, celery, onion, and peppers.
  • Combine mayonnaise, vinegar, mustard, salt and pepper.
  • More mayonnaise mixture onto macaroni mixture and stir together.
  • Garnish with cooked eggs.
  • Serve and Enjoy!
