Talk abut the most simple, easy, delicious, colorful, fresh looking Greek Pasta Salad. I use a Tzatziki Sauce from Trader Joe’s but you can certainly make your own.  Dive into this one.2

Greek Pasta Salad

Ingredients

  • 2 cups cherry tomatoes
  • 1 cucumber
  • 2 cloves garlic minced
  • 3 TBS parsley
  • 1/2 red onion
  • 2 cups lettuce
  • 1/2 cup calamata olives sliced
  • 1 cup tzatziki sauce
  • 1 lb farfella pasta
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 2 tsp white sugar
  • 1/3 cup olive oil
  • 3 TBS red wine vinegar
  • 8 oz Feta Cheese Crumbles

Instructions

  • Cook pasta per instructions, drain, and allow to cool.
  • Prepare vegetables. De-seed cucumber and cut in half moon shapes. Slice cherry tomatoes in half. Rough chop 1/2 head of lettuce. Finely chop parsley.
  • Slice olives in half. Dice 1/2 red onion.
  • In small bowl combine tzatziki sauce, garlic, olive oil, vinegar, sugar, salt and pepper with a whisk.
  • Combine pasta, vegetables, and dressing in a large bowl to coat well.
  • Serve at once or allow to chill in refrigerator for up to 3 days.
