Mexican Corn Dip Recipe
An Easy "No Cook" Recipe. Creamy Corn Dip Perfect for Summer. Use Scoops corn chips for the perfect bite. Recipe from YouTube fan Randa.

Ingredients
- 3 (11oz) cans MexiCorn, drained
NOTE: can substitute 30oz of canned whole kernel corn if unable to find MexiCorn.
- 1 (4oz) can chopped green chilies
- 3-4 Jalapeno peppers (seeded, deveined, washed and chopped)
- 3 small green onions (chopped)
- OPTIONAL: green bell peppers or sweet peppers diced
- 10 oz grated cheddar cheese
- 1 cup sour cream
- 1 cup Hellman's Mayonnaise
- 1 tsp white granulated sugar
- 1 tsp garlic powder
- paprika (garnish on top)
- 1 bag Frito Lay Scoops Corn Chips
- 1/4 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
Instructions
- In serving bowl mix together, corn, green chilies, jalapeno peppers, sweet peppers & bell peppers, cheddar cheese, sour cream, mayonnaise, sugar, garlic, salt & pepper.
- Chill in refrigerator. Sprinkle with paprika before serving.
- Best if served with Frito Lay Scoops Corn Chips.
