MexiMelts Taco Bell Copycat Recipe

Equipment

  • large skillet

  • sheet pan lined with parchment

Ingredients

  • 1 lb ground beef
  • 1 pkt taco seasoning (or 3 TBS homemade taco seasoning)
  • 1/2 cup water
  • 12 (6 inch) round flour tortillas
  • 1 (10oz) can cheddar cheese soup
  • 8 oz shredded mexican cheese (or any variety)
  • pico de gallo

Instructions

  • In a large skillet over medium high heat brown ground beef. Break up and smash beef with a spatula to get a smoother consistency like Taco Bell meat mixture.
    Drain any excess grease. Add in taco seasoning and water. Stir and simmer for 5 minutes. Continue to mash up the meat if necessary. Turn off heat.
  • Place a piece of parchment on the sheet pan. Place tortillas on sheet pan. Do not over lap more than an 1/4 of an inch.
  • Evenly coat top of each tortilla with 1 TBS of cheddar cheese soup. Place 1/4 cup of cooked meat mixture on top of the cheese. Top with a sprinkle of shredded mexican cheese. Top with 1 TBS of pico de gallo.
  • Bake in 400 degree oven for 5 minutes until shredded cheese is melted and tortilla is softened.
  • Pull out of oven and fold each tortilla in half in a taco shape. Let cool for a few minutes, then enjoy.
