My Birria Tacos Recipe

So delicious and fun to make. Everyone will gobble these up. Make plenty.

Equipment

  • griddle or large skillets

Ingredients

  • corn tortillas (As many as you need. We use 4 for each person.)
  • Slow Cooked Mexican Flavored Roast and juices (See my Crockpot Barbacoa Beef recipe that was used for this recipe.)
  • chopped cilantro
  • chopped yellow onion
  • crumbled cheese (I used queso fresco by ranchero)
  • sliced lime

Instructions

  • Prepare roast in slow cooker ahead of time. There are many recipes you can use. My Barbacoa recipe is so delicious and can have the heat ramped up or taken out. In Search Box find Crockpot Barbacoa Roast. (You can make this a day or two ahead of time so it cooks low and slow.
  • To start making the Birria Tacos, make sure you have cilantro, onion and cheese ready to go. Heat roast up so the liquid and fat are warmed through.
  • Heat a large griddle or large skillets to a medium high heat.
  • Take a corn tortilla and dip it into the juices of the roast covering both sides. Lay the wet tortilla on the hot surface of griddle or skillet. Let sit for 1 minute. Turn tortilla over. Place 2 TBS of cooked roast in center of tortilla. Sprinkle with chopped cilantro, onion and cheese. Fold tortilla over to form a taco covering the insides (cilantro, etc.). Cook for an additional minute until crispy and flip over and cook until nice and crispy. Make sure you give them time to get nice and crispy.
  • You can make several at a time using 2 skillets or a griddle. Remove tacos and place them on a serving platter. Serve up the broth from the roast in a small bowl to dunk tacos in.
  • Serve with additional onion, cilantro, cheese, squeezed lime and the roast juice.

    I searched Crockpot Barbacoa Roast as you suggested and nothing pops up except for the Birria Taco recipe. Any suggestions?
