Oatmeal Chocolate Chip Cookie

A delicious homemade cookie filled with old fashion oats and chocolate chips. Hints of honey and cinnamon can be found in this cookie.

Equipment

  • 2 large mixing bowls
  • electric hand mixer
  • spatula & whisk
  • sheet pans prepared with parchment

Ingredients

  • 1 1/3 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 3/4 cup or (1 1/2 stick) butter (melted & cooled)
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 TBS honey
  • 1 TBS vanilla extract
  • 1 large egg
  • 2 1/4 cups old-fashioned oats
  • 1 1/4 cups semi sweet chocolate chips

Instructions

  • Preheat oven to 350 degrees. Prepare baking pans with parchment paper and set aside.
  • In a large bowl whisk together flour, baking soda, ground cinnamon, and salt.
  • In a separate bowl beat together butter and both sugars using an electric hand mixer until smooth. Beat in honey, vanilla, and egg until combined. Slowly add in flour mixture and beat on a low setting until all combined.
  • Add in oats and beat on a medium setting until all combined. Turn off mixer and stir in chocolate chips.
  • Using a 3 inch cookie or ice cream scoop form the batter into balls and place on prepared baking sheets. Flatten down the cookie rounds using a corner piece of parchment or bottom of a glass.
  • Bake in preheated oven for 12-14 minutes until tops of cookies are set and edges are golden. Remove from oven and place additional chocolate chips on top of cookies pressing into cookie.
  • Allow cookies to set on baking dish for 10 minutes before removing.
