One Skillet Smoked Sausage & Cheesy Rice

Easy dinner idea using a smoked sausage (polska kilebasa) soups, rice, and cheese in one skillet.

Equipment

  • large skillet with lid

Ingredients

  • 1 TBS cooking oil
  • 1 ring smoked sausage cut into 1/4 inch rounds
  • 1 medium yellow onion, chopped
  • 2 medium bell peppers, chopped (any color)
  • salt & pepper, to taste
  • 1 1/2 tsp minced garlic
  • 2 (10.5 oz) cans cream of soup (chicken, celery, or mushroom)
  • 2 cups white uncooked long grain rice
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese, DIVIDED
  • fresh parsley for garnish

Instructions

  • Heat oil in a large skillet over medium high heat. Add sausage rounds, bell peppers & onions. Season with salt & pepper. Saute until sausages, peppers, and onions are browned and softened down.
  • Stir in garlic and cook for 1 minute. Add cream of soups, broth, and rice. Bring to a boil. Place lid on skillet and cook on low heat for 20 minutes until rice is tender.
  • Turn off heat. Stir in 1/2 of the shredded cheddar cheese. Top with remaining cheddar cheese and fresh parsley. Place lid back on until cheese is melted. Enjoy.
