Hello everyone. Welcome back. Today we
0:02
are going to make creamy chicken and
0:05
spaghetti casserole that's going to have
0:08
a Monterey flare to it. It is really
0:11
easy to put together. It's very tasty.
0:14
Your family or even just yourself will
0:17
love this recipe. We're starting in a
0:20
large pot and I'm just bringing water to
0:22
a boil. We're going to salt that. give
0:26
it some flavor so we can flavor the
0:29
spaghetti.
0:30
About one tablespoon cuz we got a lot of
0:33
spaghetti going in.
0:37
16 oz.
0:39
And while that's cooking, we got other
0:41
things that we can get ready because
0:42
this is all going to happen together.
0:43
So, we're going to be multitasking. Push
0:45
all that in. Stir it around a little bit
0:48
to keep it from sticking. We're going to
0:50
cook this per the directions on the back
0:52
of the package till it's all dente
0:54
because it will finish cooking in the
0:56
oven as a casserole. All right, you
0:59
guys. This will take, as it says, 10 to
1:03
11 minutes. Another component to this
1:06
dish is a fully cooked chicken. You want
1:09
about three cups if you can get that.
1:12
I'm using a rotisserie chicken cuz it's
1:15
fully cooked. It's got nice flavor to
1:17
it. This is a mosquite flavor. So, I'm
1:20
just going to go ahead and take this
1:21
out. I've had it in the refrigerator for
1:22
a little bit, so it is kind of jellied
1:25
in there. Now, I'm not going to let you
1:27
watch this whole thing, but I'm going to
1:28
take this chicken and we're going to
1:31
shred it, dice it, whatever you can get.
1:34
Now, what's great about this recipe is
1:36
you don't have to use a rotisserie
1:37
chicken. You can bake your chicken. You
1:39
can boil your chicken. You can cook it
1:42
in the crock pot the day before or the
1:43
morning before. Have it ready. Shred it
1:46
and dice it. Whatever you want. Just
1:47
give it some flavor, you guys. That's
1:49
all I'm asking. All right, here we go. I
1:53
have it all chopped up. I chopped it up
1:55
pretty small. That way it can distribute
1:57
throughout the casserole pretty well and
1:59
everybody gets chicken. All right, let's
2:02
talk about the next component, which is
2:05
spinach.
2:07
Now I am using one box which is 10
2:11
ounces of frozen chopped spinach. I
2:14
thawed this out in my refrigerator and
2:17
then I drained it really well. I just
2:18
wrapped some paper towels around the
2:20
spinach, squeezed it out really well and
2:23
then that way I have nice chopped
2:26
spinach here. You don't want it wet
2:29
because it'll drown out your casserole.
2:31
So this will be just perfect right here.
2:34
In a large mixing bowl, we're going to
2:36
place our cooked diced chicken.
2:42
We're going to add in our drained
2:45
chopped spinach.
2:47
We're going to add in two cans of cream
2:49
of chicken soup. These are 10 oz each.
2:58
One and two. Get those in.
3:07
We're going to add in 16 oz sour cream.
3:11
Sour cream will add a nice tanginess to
3:14
the dish. Use my can scraper here.
3:19
There we go. All right, you guys.
3:23
I did grate up 16 ounces of Monterey
3:26
Jack cheese.
3:28
Y'all just didn't see that part cuz I
3:30
did not videotape it.
3:32
Anyway, this is what it looks like. I
3:35
gave it a little taste, which I'm going
3:37
to do again. Why not?
3:40
It's nice and creamy. I love the flavor
3:43
of it. So, what we're going to do is put
3:46
half of that into our mixing bowl with
3:49
the soup, sour cream, spinach, and the
3:51
chicken. All right, just half because we
3:53
are going to use the other half for the
3:55
top of the casserole. Oh, look at that.
3:58
Doesn't that look delicious?
4:00
Set that off to the side.
4:02
All right, we're going to add in a few
4:04
teaspoons of minced garlic or whatever
4:07
you like. Right into the bowl, y'all.
4:09
This is a great bowl right here.
4:13
We're putting it all in there. We're
4:15
going to open up one can of diced
4:18
tomatoes with green chilies. I'm only
4:21
going to use half of this. This is a 10
4:23
oz can, but I'm going to use 5 oz. Now,
4:26
generally I put in like roasted red bell
4:30
peppers and dice them up. Or you can put
4:32
in sundried tomatoes and dice those up.
4:36
I don't have either one,
4:39
but I am going to do this here. It's
4:42
going to add a little flavor to it with
4:44
the green chilies. You don't have to do
4:45
that. There we go. Right there. I'm
4:47
going to drain this because I don't want
4:48
all that juice in there. Let's put some
4:50
of those in there.
4:53
It'll be like adding the sundried
4:55
tomatoes or the roasted red bell
4:58
peppers, which I really love in this
5:00
dish. We're going to put a crazy amount
5:03
of black pepper or whatever you like.
5:07
I'm just going to cover the top a little
5:08
bit here with it.
5:11
Here we go. This is one of my favorite
5:14
dishes to make
5:17
and pass off half of this to Joseph.
5:20
Now, his wife has never had this recipe
5:23
before, so they're going to enjoy half
5:25
of this together because half of this is
5:28
going to stay here in the house. But
5:29
we'll take it over to them, leave it at
5:31
their doorfront. We're going to give
5:33
this a good mix until it's well combined
5:36
and well distributed. All those
5:38
ingredients in there. I made this for
5:40
you guys three years ago. I looked it
5:43
up. I'm like, "Oh, there it was." It's
5:46
been a while.
5:48
Okay. When you see those colors do that,
5:50
you see when you put the red in there
5:52
with the green. Yeah,
5:55
it's really nice looking.
5:58
I'm going to bring over my cooked
6:00
drained spaghetti. I just used my
6:04
strainer here that attaches to my pot.
6:08
And then what you want to do,
6:11
add this mixture into our spaghetti.
6:14
It'll be easier that way.
6:16
And then we'll mix it all together.
6:20
We still got some stuff to do. The easy
6:22
stuff, you guys. You can't tell me this
6:25
wasn't easy, right?
6:29
Get that all blended together.
6:32
Dig deep. Pull up. Yeah.
6:36
If you have any questions about this
6:38
recipe, you can go to my recipe blog,
6:40
katherine'splates.com,
6:42
and you can find the recipe there for
6:44
this.
6:46
I'll bring it up there for you. There's
6:49
also an older video that's linked to it
6:52
also. All right, you guys, go bring over
6:55
your 9 by13 baking dish. Make sure it's
6:58
deep enough.
7:01
Spray it first. Woo! Let's do that so
7:03
the spaghetti doesn't stick. found a way
7:05
to make it all natural. You guys use
7:07
these bottles right here. In my recipe
7:11
blog, kathern'splates.com, I do have a
7:13
link to my Amazon store where you can
7:15
find all of these tools and dishes and
7:19
pots and anything else that I use. I'm
7:23
just going to take a brush and get that
7:24
all up in there.
7:27
I don't want to spray it too much. My
7:29
dog's down there on the floor licking
7:31
everything.
7:32
Does that surprise you with a beagle?
7:35
All right, let's fill it up. There's my
7:38
oven preheated. We'll talk about that
7:39
here in just a minute.
7:41
There we go.
7:51
All right.
7:53
Oh my goodness.
7:57
Spread it out nice and even.
8:01
You know what they say, nice and even.
8:03
And it cooks nice and even, right? Oh,
8:06
look at that spaghetti in there. Yeah,
8:10
Joseph's going to be very happy.
8:13
I hope Megan will be, too.
8:17
I make them lots of things.
8:20
And Rihanna, too.
8:23
We're going to take the remaining eight
8:25
ounces of that shredded Monterey Jack
8:27
cheese. Place it right on top. Nice and
8:30
evenly.
8:33
You can't beat shredding your own
8:35
cheese. However you do it, shred your
8:37
own.
8:39
It melts beautifully. Gives it a nice
8:41
color.
8:44
All right. I have one more ingredient.
8:46
Y'all know what it is.
8:49
French's fried onions. These are crispy
8:52
fried onions.
8:56
I'm going to add a nice flavor and
8:58
texture to the dish. All right, you
9:00
guys.
9:06
There we go. Salty goodness. I can smell
9:08
the garlic in there. And it smells
9:10
delicious.
9:13
All right, we're just going to put these
9:14
right across the top.
9:19
All right, that looks good.
9:22
M. All right, we're going to place this
9:24
in the oven that I've preheated at 350°.
9:27
We're going to bake this between 40 to
9:30
50 minutes till that cheese is nice and
9:33
melted and kind of a golden color.
9:35
Everything is heated through. I'll be
9:37
back. I'm going to serve this up. Give
9:39
it a try for you
9:42
y'all. Look at that. Oh my gosh. Doesn't
9:47
that look delicious? That cheese is nice
9:50
and melted, golden brown across the top.
9:53
And the little onions nice and crispy.
9:57
Mhm. We're going to decorate this a
9:59
little bit with some You can put chives,
10:01
green onions, some fresh parsley,
10:06
whatever you got to give it a pop of
10:08
color.
10:10
And then we're going to dive in. That
10:12
green onion, another layer of flavor on
10:16
there. All right, you guys. Let's grab a
10:19
spoon.
10:23
Oh,
10:25
look in there.
10:28
This is our easy weekn night meal. What
10:31

10:34
spaghetti with a Monterey flare
10:38

10:48

10:50
bite.
10:58
I love that cheese on top.
11:03
Got some hidden vegetables in there.
11:05
That spinach.
11:11
Woo! Those things stay crunchy, too.
11:17
All right, you guys.
