0:00
it's dinner time and I'm going to show
0:01
you how to make one of my older recipes
0:04
This is called double crusted chicken
0:07
pot pie It's a really easy recipe to
0:10
throw together pop into your oven and oh
0:13
my goodness a golden flaky crust filled
0:17
with a delicious chicken pot pie mixture
0:20
We're going to start with some actual
0:22
chicken here No rotisserie chicken in
0:25
this recipe Y'all come on up We're going
0:27
to go ahead and get started Now before
0:29
we do that grab your crust out of the
0:33
refrigerator Let it sit out while we're
0:35
doing this That way it's pliable and
0:37
really easy to put into our pie plates
0:40
All right This is what I'm using right
0:44
gloves I've got three chicken breasts
0:47
They're boneless skinless Just prepare
0:50
them any way you want when they come out
0:52
of the package If you wash your chicken
0:53
breast go ahead and do that You want to
0:55
make sure you pat them dry We're going
0:59
these I think this is about half an inch
1:02
I have 1 and 12 lbs of chicken
1:06
here We want to cut it small That way it
1:12
faster All right we got our strips Now
1:16
we're just going to turn our strips
1:18
around cut through those to make dices
1:35
All right before we put them in our pan
1:37
and start frying these up we want to
1:39
give them some nice seasonings Flavor
1:44
up All right let's gather our seasonings
1:50
pepper garlic powder onion powder and I
1:54
think I'm going to do a little bit of
1:56
smoked paprika and then probably just a
1:59
tad of Oh I think I have it right here
2:07
seasoning All right All right We're just
2:09
going to season across our
2:11
chicken The salt give it some flavor
2:37
paprika And some poultry seasoning
2:46
good Why does that always smell like the
2:53
tongs Just kind of blend it all together
2:56
so everything's nice and
3:00
Okay I've got a large skillet over
3:03
mediumigh heat I'm getting it nice and
3:05
hot I'm going to add about one
3:07
tablespoon of some cooking oil
3:13
That might have been one and a
3:20
chicken We want it to start sizzling We
3:24
want to give it some nice color And
3:26
we're going to cook the chicken all the
3:28
through Going to lay it in one single
3:32
layer All right I'm going to let it cook
3:39
side and then we're going to start
3:42
working on that crust right now and get
3:43
that ready while the chicken is doing
3:47
thing I'm going to pull out one of the
3:49
crust and we're going to roll it into
3:52
our baking dish here This is a pie plate
4:00
dish Now since we've let it sit out it's
4:08
go I'm going to push it up Make sure
4:10
that we get it above the edge of the
4:12
dish here cuz we're going to seal it
4:16
one You don't have to spray your pie
4:18
plates cuz the dough has enough
4:21
shortening in it to prevent it from
4:23
sticking All right we got that done
4:25
Let's go check our chicken Now I'm going
4:27
to start moving it around
4:32
We'll keep moving it I'm going to cook
4:35
it for another 3 minutes and then we'll
4:37
move it again We want our chicken all
4:39
the way cooked through No pink in the
4:42
chicken Now my recipe called for a
4:44
tablespoon of butter also I'm going to
4:46
go ahead and add that in
4:49
there All right let's give it a stir
4:51
again and we'll finish cooking this
4:55
off All right I gave it a few
5:00
Go to your biggest piece of your chicken
5:02
and then just kind of break it in
5:04
half and it should be white inside which
5:10
there We're going to add in one
5:12
tablespoon of minced garlic We're going
5:18
in for about 30 seconds Let it release
5:23
flavors get into that
5:26
chicken All right Now we have 3
5:29
tablespoon of butter We're going to add
5:32
in We're going to make our own
5:35
this It's not going to be a can of cream
5:38
of soup Nope We're going to stir that in
5:42
And then we're going to add in 3
5:43
tablespoon of allpurpose
5:45
flour It'll help thicken it up
5:57
three Then I'm going to sprinkle in some
6:06
tablespoon There we go
6:09
Flavor All right we're going to mix this
6:13
together We're going to stir this around
6:15
for one minute We want to cook that raw
6:19
flavor out of the flour
6:23
I want to make sure that chicken is nice
6:24
and coated with that flour too Y'all it
6:28
delicious All right we're going to add
6:30
in one cup of chicken
6:38
broth All right we're going to add in
6:41
like 1 and 1/2 cups of a mixed vegetable
6:45
This one here has carrots corn green
6:48
beans and peas It's just a frozen
6:53
bag And we're going to add those
6:58
in All right we're going to mix this in
7:01
Ah it's thickening up
7:04
nice We're going to add some creaminess
7:07
to it I'm going to add in 2/3 cup of
7:10
some heavy whipping cream You can put
7:13
milk in if you want or half and half
7:15
whatever you have on hand
7:18
We're going to see where my 2/3 cupy is
7:26
go All right we're going to stir this in
7:29
Get all those flavors into the
7:33
cream Oo look how thick this is
7:37
Yum Grab a spoon Let's taste it for any
7:40
more seasonings because that is your
7:48
That is delicious All right let's turn
7:53
burner Let's get our pie
8:02
That's going to be good
8:05
All right once we get it all in there
8:06
we're going to smooth it
8:09
out All right let's get the other crust
8:22
here All right Now what we're going to
8:24
do is just pinch it with the other one
8:28
Just kind of roll it down with both of
8:38
that All right Now what I'm going to do
8:40
is get a four and we're gonna crimp it
8:43
Just push down on the dough and come up
8:49
look We're going to crack an egg into a
8:51
small dish Going to put a little bit of
8:54
water in there And then we're going to
8:58
fork Make sure it's nice and
9:02
frothy Okay Okay we're going to take our
9:04
pastry brush and we're going to brush on
9:11
pie and give it a nice golden brown
9:18
flaky And we're going to do that to the
9:22
edges And then grab you a steak
9:27
knife And we're going to put slits in
9:30
the center gonna go across the center
9:34
That'll help release the
9:36
steam Make sure your pie don't blow up
9:38
in the oven I've got my oven preheated
9:41
375° We're going to bake this for about
9:44
30 to 35 minutes until it's nice and
9:46
golden brown across the top Now I'm
9:49
cooking this on the bottom of the bottom
9:52
rack Okay all the way to the bottom That
9:55
way we cook the bottom crust and the top
9:58
crust doesn't get burnt Okay it stays
10:00
nice and golden brown All right I'll be
10:02
back cuz you know I want
10:04
some Oh my gosh you guys It's done We
10:09
let it rest for about 20 minutes just to
10:11
kind of pull itself together so it'll
10:13
look awesome for you guys Let's cut into
10:27
it Y'all ready for it
10:35
that There it is you guys What do you
10:38
think double crusted chicken pot pie We
10:42
didn't wait long enough for it to really
10:45
okay Look at that golden
10:53
crust There's my bite
11:07
That crust is so flaky I love that
11:10
golden brown on the bottom It cooked the
11:16
way Oh and that creaminess inside the
11:20
chicken You made your chicken You know
11:22
what it's going to be nice and seasoned
11:25
and flavored All right you guys Make a
11:27
quick and easy dinner Give me a thumbs
11:31

11:34
