Philly Cheesesteak Meatloaf

Ingredients

  • 1 yellow onion, cut onion in half and slice
  • 1 green bell pepper, slice thinly
  • 1 TBS butter
  • 1 TBS cooking oil
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 2 lbs ground beef
  • 1 cup panko bread crumbs or plain bread crumbs
  • 2 large eggs
  • 1 TBS Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 9 slices provolone cheese

Instructions

  • In a large skillet over medium high heat, bring butter and cooking oil to a sizzle. Cook onions and bell peppers until softened and lightly caramelized.
  • In a large bowl mix together ground beef, bread crumbs, eggs, garlic powder, worcestershire sauce and salt & pepper.
  • Preheat oven to 350 degrees. Place parchment paper on a baking sheet and place half of the meat mixture into the center of parchment paper and form an oval shape about 1 inch thick. Press center of the meat mixture into a bowl shape. Place 3 slices of cheese into center of bowl. Place all cooked onions and peppers on top of cheese. Cover with additional 3 slices of cheese. Take remaining meat mixture and cover the top layer of cheese. Make sure to seal the top meat mixture to the bottom meat mixture to keep filling and cheese in.
  • Bake for 45 minutes to an hour until meat loaf is done and temperature of the meatloaf is 165 degrees. Pull meatloaf out of oven and place remaining cheese slices on top. Place back in oven for 15 minutes to lightly brown and melt the cheese. Let sit for 5 minutes before serving.

    Think my faviort dinner has always been, meatloaf. I have been Vegan now for 2 years. When I saw this recipe and watched your video, it really made me miss meatloaf. I started thinking then,hey why not make a vegan version.Just a little tweaking ,voila!! I used 4 Beyond Burgers crumbled up, in place of the hamburger, vegan Daiya provolone Cheese.instead of egg 2 tablespoons of water. Other than these few tweaks followed rest of recipe, wow was this absolutely delicious. And so pretty too!! What a presentation on the table. Thank you Catherine for this wonderful dinner idea. My husband loves it. Vegan Philly Cheese steak Meatloaf is now a huge hit at our house.

    In my Vegan version of the Philly Cheese steak recipe I did not fry my onions and green peppers in butter or oil. Instead I used 2 tablespoons of Tamarind to 3 tablespoons of water and 1/2 teaspoon of curry powder, I added 1/4 cup fresh mushrooms in the skillet. To the meatloaf mixture I added 1/2 of medium sized red bell pepper. Sorry for having forgotten to add this in my original post. Anyone trying the vegan version let me know if you liked it. Maybe Catherine will make the vegan version of the philly Cheese steak meatloaf on her cooking show.I promise you, you will love it as much as the original.
