Sheet Pan Hawaiian BBQ Chicken

An easy all in one sheet pan dinner idea. Delicious flavors.

Equipment

  • large sheet pan
  • large bowl

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts cut into bite size pieces
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 TBS cooking oil
  • 1 red onion chopped
  • 2 1/2 bell peppers chopped, any color
  • 4 green onions, chopped
  • 1/2 cup any flavor of bbq sauce (I used honey barbecue sauce)
  • 20 oz can pineapple chunks drained
  • 1/2 cup juice from pineapple chunk can from above
  • 2 tsp minced garlic
  • additional 1/8 – 1/4 tsp salt & black pepper if needed
  • add additional 1/4 cup of pineapple juice or bbq sauce if needed
  • sesame seeds for garnish

Instructions

  • Preheat oven to 350 degrees and line a heavy large sheet pan with foil.
  • In a large bowl, place cut up chicken, chopped peppers and onions. Season with salt & pepper.
  • In a medium bowl whisk together pineapple juice, bbq sauce, garlic, and extra salt & pepper if needed. Pour mixture into large bowl that has the chicken and vegetables in it.
  • Mix well. Pour all chicken and vegetables onto the prepared sheet pan and spread evenly.
  • Place in preheated oven and bake for 20 minutes. Pull pan out of oven and place the drained pineapple chunks onto pan evenly around the chicken and vegetables. Bake again for 15-20 minutes until chicken is cooked through and tender.
  • Sprinkle with sesame seeds. Serve over cooked rice or pasta.

    made this sheet pan bbq chicken dish turned out great! had a bunch left over so 2 days later made it into sweet & sour chicken making your sauce from your sweet & sour crock pot chicken it turned out delicious!! thank you so much for making something different for us 2 try 4 dinner.. keep up the good work…?
