Sloppy Joes Cornbread Casserole

Ingredients

Sloppy Joes

  • 1 TBS cooking oil
  • 2 TBS butter
  • 1 1/2 lbs ground beef
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 1/2 cup ketchup
  • 1/2 cup water
  • 1 TBS brown sugar
  • 1/2 tsp yellow or dijoun mustard
  • 2 tsp worcestershire sauce (optional)

Cornbread Topping

  • 1 (8oz) box jiffy cornbread mix (you can use any other brand)
  • 1 egg
  • 1/3 cup milk
  • 1 can kernel corn, drained
  • 1 cup shredded cheese (cheddar or any favorite flavor)

Instructions

  • Preheat oven to 400 degrees.
  • In a large oven proof skillet over medium high heat bring oil and butter to a sizzle.
    *If you do not have an oven proof skillet, you can cook this mixture in a regular large skillet and place beef mixture into a casserole dish.
  • Saute peppers and onions in the butter and oil until softened. Add in ground beef and brown until beef is no longer pink. Drain meat.
  • Stir in ketchup, water, brown sugar, mustard, worcestershire sauce, salt & pepper if needed.
  • Lower heat and allow to simmer while making the cornbread batter.
  • Mix together box of jiffy cornbread mix, egg, milk, corn, and cheese. Pour mixture all over sloppy joes mixture in oven proof skillet.
    *If using a casserole dish, pour soppy joe mixture into lightly sprayed casserole dish and pour corn bread mixture on top.
  • Spread cornbread mixture to cover sloppy joes.
  • Place skillet or casserole dish into preheated oven and bake for 15-20 minutes until cornbread is cooked through, golden brown on top. Let cool for 5 minutes. Enjoy.
