Strawberry Jell-O Poke Cupcakes

They look so scrumptious and are so fun to make and eat. See how easy these are to put together using a box cake mix, instant Jell-O. Oh my.

Strawberry Jell-O Poke Cupcakes

Ingredients

  • 1 box yellow cake mix
  • ingredients to make cupcakes, found on back of cake mix box
  • 1 6 oz box strawberry flavored instant jell-o
  • 24 standard size cupcake wrappers
  • 1 container strawberry flavored frosting
  • 1 container frozen cool whip, thawed
  • 1 pkg fresh strawberries

Instructions

  • Make cupcakes per the instructions on back of cake mix box and allow to cool.
  • Poke many holes in cupcakes using a fork or a skewer. Place cupcakes on a foil lined baking pan.
  • Make jell-o per instructions on jell-o box. Using a large spoon carefully pour jell-o into holes of cupcakes. I press down on top of cupcake to fill holes. Allow to set up in your refrigerator for 30 minutes to an hour.
  • Make the frosting by combining the container of frosting and container of cool whip together. I used an electric hand mixer.
  • You can pipe frosting onto cupcakes with a piping bag and large tip, or use a ziploc bag and cut a hole in bottom to pipe. Or just spoon frosting on.
  • Wash strawberries and cut stem tops off. Make 4-5 slices long ways through strawberry without cutting through. (About 3/4 of the way through.) Fan the slices out and lay them on the cupcake. Enjoy.
