Tater Tot Casserole

Ingredients

  • 1-2 lbs Ground Beef
  • 1 Onion Diced
  • 1 green bell pepper, diced
  • 1 TBS butter
  • salt & pepper to taste
  • 1 tsp garlic minced
  • 1 (10 oz) can cream of soup (chicken, mushroom, or celery)
  • 2 cans green beans (drained)
  • 1 cup or can corn, drained
  • 1-2 cups shredded cheese (cheddar, monerery jack or other favorite)
  • 1 (28 oz) bag frozen tater tots or tater crowns

Instructions

  • In a large skillet over medium high heat add butter and allow to sizzle. Place onions and green bell peppers in, season with salt & pepper. Cook until softened.
  • Add in ground beef and cook until browned. Add in garlic and cook 1 additional minute.
  • Mix in cream of soup, green beans and corn. Turn off burner.
  • Preheat oven to 375 degrees and spray a casserole dish with non-stick cooking spray.
  • Pour ground beef mixture into casserole dish evenly. Sprinkle the cheese over the top of mixture. Layer tater tots on top of cheese completely covering the top.
  • Bake uncovered for 35-40 minutes until tater tots are crispy and casserole is heated through.
