BLT Chicken Salad

Taking a classic Chicken Salad and giving it a BLT spin.

Equipment

  • cutting board and sharp knife
  • serving bowl
  • large sheet pan lined with parchment paper

Ingredients

  • 3 cups cooked chicken, shredded or chopped (I use 2 rotisserie chickens for this recipe
  • 7 pcs crisp cooked bacon, chopped bite size pieces
  • 2 celery ribs, diced small
  • 12 cherry tomatoes, cut into quarters
  • 1 medium red onion, diced small
  • 12 seedless grapes (any variety) cut into quarters

Dressing

  • 3/4 cup mayonnaise
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 2 tsp lemon juice
  • bib lettuce leaves
  • croissantws

Instructions

  • Combine all salad ingredients into a large mixing bow until well combined.
  • Serve on bib lettuce leaves or serve in croissants with lettuce leaves.
