Coffee & Chocolate Crinkle Cookies

A perfect delightful cookie using your favorite coffee. Don't forget the chocolate to bring our your favorite coffee flavor.

Equipment

  • 2 mixing bowls
  • sheet pans
  • parchment paper or silicone mat

Ingredients

  • 1 1/4 – 1 1/2 cups all purpose flour
  • 1 TBS baking powder
  • 1/2 tsp salt
  • 12 oz semi sweet chocolate chips
  • 4 TBS butter
  • 2 large eggs
  • 1/2 cup strong brewed coffee (not dry granules, make sure it's liquid)
  • 2 TBS granulated white sugar
  • 1 cup powdered sugar

Instructions

  • In a microwave safe bowl add chocolate chips and butter. Heat in microwave for 30 seconds then stir. Place back in microwave for 30 seconds, then stir until all chips have melted. It should appear doughy. Set aside to cool.
  • In a large mixing bowl add 2 eggs, 1/2 cup prepared coffee, and granulated white sugar. Beat until well combined. Add the cooled chocolate and beat until well combined. (Should have a pudding consistency.)
  • Sift in the all purpose flour, baking powder, and salt. Stir with a wooden spoon until all combined. Should look semi-firm. (If needed, add an additional 1/4 cup of flour.)
  • Cover with plastic wrap and refrigerate for 30 minutes to 1 hour to firm up dough.
  • After chilled and firm, form 1 – 1 1/2 inch dough balls and roll them into powdered sugar. (place powdered sugar into a pie plate for easy rolling)
  • Place powdered sugar covered dough balls onto prepared sheet pans spacing them out about 2 inches. (they will spread a little while baking)
  • Bake in a 350 degree preheated oven for 10-12 minutes until cookies are firm around the edges and tops. (don't over bake them or the chocolate will burn)
  • Let sit on baking pans for 5 minutes before removing them to a wire rack to finish cooling.

    Today I’m going to try to make them they look so so so good I watched you while you was making them I’ll let you know I might turn out thank you and can we put nuts in them or dry fruit please let me know I don’t want to make a badge and mess it up so I’ll wait for you before I do it cuz that’s a lot of chocolate to waste if it don’t turn out I’ll still eat it thank you honey hope to hear from you by the way my name is. Or everybody calls me granny
