Crockpot Sausage, Potatoes, and Cabbage (Colcannon)

A delicious crockpot meal with sausage, potatoes, and cabbage with a delicious seasoned broth.

Equipment

Ingredients

  • 14 oz smoked sausage sliced 1/4 inch thick (any flavor of cooked sausage)
  • 4 TBS butter
  • 1 medium onion, chopped
  • 2 tsp minced garlic
  • 1 lb red potatoes cut into bite size pieces (peeled or leave skin on and wash)
  • 1 small head of cabbage cut into bite size pieces
  • 2 cups broth (beef, chicken, or vegetable) I used Better Thank Bullion Vegetable Base
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Instructions

  • In a large skillet over medium high heat, melt butter until sizzles. Add in sausage and cook until browned on both sides. Add in chopped onion and cook until softened. Add in garlic and stir for 1 minute. Turn off heat and place sausage mixture into bottom of crockpot.
  • Place cut potatoes and cabbage into crockpot. Pour in broth. Add in seasonings. Mix altogether.
  • Place lid onto crockpot and cook on low for 6-7 hours or on high for 4-6 hours until potatoes and cabbage are tender.
