No Peek Chicken and Rice Casserole
Easy but delicious flavored casserole.
Equipment
- 9 x 13 casserole dish
- large mixing bowl
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts cut into thin cutlets
- 1 (10.5oz) can cream of celery soup
- 1 (10.5oz) can cream of chicken soup
- 1 package lipton onion soup mix
- 1 1/2 cups water
- 1 1/2 cups shredded cheddar cheese
- 1 cup white long grain rice (uncooked)
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp paprika
- dried or fresh chopped parsley, for garnish
Instructions
- Preheat oven to 350 degrees. Spray a 9 x 13 casserole dish with non-stick cooking spray.
- Lay chicken in prepared casserole dish in an even layer.
- In a large bowl whisk together cream of soups, onion soup mix, water, rice, black pepper, garlic powder, onion powder, and paprika until well combined.
- Pour mixture over chicken to cover and spread evenly.
- Cover tightly with foil.
- Bake in preheated oven for 1 1/2 hours.
- Remove foil and check for doneness of chicken and rice.
- Sprinkle with shredded cheese. Place back in oven for 5 minutes or so to melt cheese. Sprinkle with parsley.
