Key Lime Bars

A cool refreshing dessert with a shortbread crust and a delicious cool lime filling.

Equipment

  • 8 x 8 baking dish
  • electric hand mixer

Ingredients

Shortbread Crust

  • 1/2 cup butter, softened
  • 1/4 cup white granulated sugar
  • 1 cup all purpose flour

Lime Filling

  • 4 oz cream cheese, softened
  • 1 (14oz) can sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup key lime juice (zest limes before squeezing juice out)
  • 1/8 tsp salt

Whipped Topping & Garnish

  • 1 cup heavy whipping cream
  • 1 TBS powdered sugar
  • 3-4 limes zested and sliced to decorate

Instructions

  • Spray an 8 x 8 baking dish with a non-stick cooking spray. Set aside.

Making shortbread crust

  • In a medium bowl using an electric hand mixer, cream together butter and sugar for 2-3 minutes until fluffy. Gradually mix in flour until mixture forms a crumb texture. Pour crumbs into prepared baking dish and press to form a crust on bottom of dish by using a spatula, your hands, or the bottom of a glass.
  • Chill in refrigerator for 15 minutes. Preheat oven to 350 degrees. Remove crust from refrigerator and place into oven, bake for 15-20 minutes until crust is a light golden brown on the edges. Take out of oven and cool.

Making the lime filling

  • In a large bowl using an electric hand mixer, combine cream cheese, sweetened condensed milk, egg yolks, lime juice and salt. Beat for 5-6 minutes until mixture is smooth.
  • Pour mixture over cooled crust and place into preheated oven for 15-20 minutes until filling is set and doesn't giggle on the top. Take out of oven and let cool on a wire rack for 10-20 minutes. Then place in refrigerator to chill for 2 hours.

Making Whipped Topping

  • In a small or medium bowl whisk together whipping cream and powdered sugar until medium peaks form. After the bars have chilled, decorate with whipped topping, lime zest, and lime slices if desired.
