Chicken Scampi

This is one of my favorite Italian dishes with a creamy white dish.  So full of color and flavor.  Very simple, easy, and delicious.

Chicken Scampi

Ingredients

  • 1/2 lb angel hair pasta cooked
  • 1 lb chicken tenders
  • 1 cup Flour
  • 1/2 cup milk
  • 3 TBS olive oil divided
  • 2 bell peppers (vary colors) cut in strips.
  • 1/2 Red Onion cut in strips
  • 5 TBS butter
  • 6 cloves garlic minced
  • 1 1/3 cups Chicken Broth
  • 3/4 cup white wine (drinking variety)
  • 2/3 cup heavy whipping cream
  • 2/3 cup shredded parmesan
  • salt, pepper, italian seasoning blend

Instructions

  • Cook pasta per instructions, drain and keep covered.
  • In a dish combine four, 1/4 tsp salt, 1/4 pepper, and 1 tsp Italian seasoning. Put milk in a separate dish.
  • Take chicken tender and place in four on both sides, place in milk on both sides, and place back in flour on both sides, set on a plate. Repeat until all tenders are coated.
  • Place 2 TBS olive oil in a large deep skillet and heat on medium high. Place chicken tenders into skillet and cook for 2-3 minutes on each side until completely cooked. Remove from skillet.
  • Place an additional 1 TBS of cooking oil into skillet and heat on medium high. Place all peppers and onions and saute for 2 minutes. Season with salt.
  • Add butter and garlic and continue cooking for 1 minutes.
  • Add wine, chicken broth, and heavy cream and simmer for 5 minutes.
  • While simmering add salt, pepper, and Italian seasoning to taste.
  • Add chicken back in and cook for 1 minute.
  • Add spaghetti and parmesan cheese and stir carefully.
  • Turn heat off.
  • Serve and Enjoy.
