Author Catherine’s Plates

Ingredients

  • 2 3/4 cup all purpose flour
  • 1/2 tsp salt
  • 1/4 cup granulated white sugar
  • 1 pkt active dry yeast or 2 1/4 tsp
  • 3/4 cup milk
  • 3 TBS butter
  • 1 large egg

Filling Mixture

  • 3 TBS butter
  • 2 TBS ground cinnamon
  • 1/4 cup brown sugar

Cream Cheese & Vanilla Icing

  • 1/4 cup cream cheese, softened
  • 5 TBS butter
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 3 TBS milk

Instructions

  • In large mixing bowl, whisk together flour, sugar, salt, and yeast. Set aside.
  • In a medium sauce pan add milk and butter. Melt butter into milk over medium heat while stirring. Turn off heat. Place milk mixture back into measuring cup and allow to sit until it reaches a warm temperature of 110 degrees or is just warm to the touCh. (This will allow the yeast to activate.)
  • In a small bowl whisk egg. Add a little bit of the warm milk mixture to egg and mix to combine. Pour the egg mixture back into the milk mixture and mix together. Pour the milk and egg mixture into the dry flour mixture.
  • Using a wooden spoon mix until a dough ball forms. Place dough ball onto a flour covered work surface and knead for 3-5 minutes until smooth. Place in a greased medium bowl and roll the dough ball to cover with the oil. Cover the bowl with plastic wrap and a kitchen towel and allow to rest in a warm place for 30 minutes to double in size.
  • Remove double sized dough and place onto a clean work surface. Roll out dough to approx. 8 x 14 inch rectangle and 1/4 inch thickness.
  • Slather soft butter all over the dough. Sprinkle with ground cinnamon and the brown sugar. Starting at the long end near you, start rolling the dough tightly into a long tubular shape. Cut into 12 -16 even rounds. Place in a greased 9 x 13 baking dish. Cover with plastic wrap and a kitchen towel and allow to rest and rise for 60-90 minutes.
  • Remove towel and plastic wrap and place into a 375 degree preheated oven for 25-28 minutes until golden brown and cooked through.
  • Remove from oven and allow to rest while making the icing.
  • In a medium bowl, beat the butter and cream cheese until combined. Add in 1 1/2 cups of powdered sugar and 3 TBS of milk until smooth. Beat in vanilla. (If you need a thinner or thicker icing adjust with extra milk or extra powdered sugar.)
  • Slather icing all over the cinnamon rolls. Enjoy.
