Homemade Orange Cake with Orange Icing

This orange cake is so easy to make and very delicious. I use fresh squeezed orange juice and the zest of these oranges for the freshest flavored orange cake you could make.

Homemade Orange Cake with Orange Icing

Ingredients

  • 1/2 cup butter, softened
  • 1 cup granulated white sugar
  • 2 eggs
  • 3 TBS fresh orange zest
  • 1/2 cup fresh squeezed orange juice
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Icing Ingredients

  • 1 3/4 cup confectioners sugar
  • 1/4 cup fresh squeezed orange juice
  • 1 TBS fresh orange zest
  • 1 TBS butter, melted

Instructions

  • Preheat oven to 350 degrees. Spray a standard size (9x5x3) loaf pan and set aside.
  • In a large stand mixer bowl, beat together, sugar and butter until light and creamy.
  • Beat in eggs one at a time until well mixed. Add in orange juice and zest and mix until fully combined.
  • In a medium bowl whisk together flour, baking powder, and salt. Gradually add into butter mixture and beat until well combined.
  • Pour batter into loaf pan and smooth out.
  • Bake for 50-60 minutes. You should be able to pull out a toothpick clean.
  • Let cool in pan for 10 minutes. Take out of pan and cool completely on wire rack.
  • To make the orange glaze, mix all glaze ingredients in a pourable container or measuring cup. (To thin glaze, add a small amount of milk. To thicken glaze add more confectioners sugar.)
  • Pour glaze on the top of cake. Let sit for a few minutes. Enjoy.

  • This sounds so light and refreshing! About how many oranges did you have to use to get enough zest and juice for the cake and frosting?
