Definitely a fun way to eat pancakes and bacon as one.

Pancake Bacon Dippers

Ingredients

  • 1/2 pkg bacon
  • pancake mix
  • ingredients needed on back of pancake mix box

Instructions

  • Prepare bacon first and cook until crisp. I use the oven version. (Place a wire rack onto a sheet pan that has a lip around it to keep grease from bacon from dripping onto oven floor. Place bacon single file on rack. Place in preheated 400 degree oven for around 15 minutes until desired texture of bacon is met. Usually crispy and golden brown.
  • Prepare pancake batter per instructions on back of pancake mix box or bisquick box (which is what I used).
  • I added a tsp of vanilla into batter for additional flavor. Optional.
  • Heat up skillet or griddle on medium heat. Lightly coat with butter. (This will keep pancakes from sticking and adds flavor.)
  • Using a ladle scoop pancake batter onto skillet or griddle into a oblong or oval shape.
  • Place bacon strip onto batter. Add more pancake batter to cover bacon strip in stripes, this will help adhere the bacon to the pancake.
  • Once the pancake batter is covered with tiny bubbles it is time to turn over the pancake bacon. It should be nicely golden brown on the bottom. Cook for an additional 30-45 seconds and then pull off. Finish with rest of batter and bacon until all done.
  • Pour syrup into a small bowl and place in center of plate. Place pancake bacon dipper around the bowl of syrup. Dip them and enjoy.
