warm, cozy muffins for fall. I've got
0:05
many varieties that I'm going to show
0:06
you today. The first one we're going to
0:09
start off with is a banana bread muffin.
0:13
They're going to be moist, sweet, and
0:15
very delicious. What you want to do is
0:18
start off in a large mixing bowl. Place
0:20
your three very ripe bananas. And when I
0:24
say very ripe, you want to make sure
0:26
that the darker they are, the better for
0:28
these. are going to be sweeter that way.
0:30
All right, grab you a fork and start
0:32
mashing those bananas. Now, you're going
0:34
to want to mash these up really good to
0:36
get a smooth consistency.
0:39
There could be a few lumps in it, and
0:42
that's totally fine, but you don't want
0:43
a whole bunch of lumps.
0:46
So, just make a few spins around the
0:47
bowl with your fork.
0:52
Just like that. Now to the bananas,
0:54
we're going to add 3/4 cup of brown
0:57
sugar. You want to make sure that you
1:00
pack it good. And then we're going to
1:02
add in half a cup or one stick of melted
1:06
butter. Make sure you cool it slightly.
1:15
Mix that together.
1:21
We're a banana bread family.
1:23
>> Yes, we are.
1:25
>> My mom makes banana breads for the
1:27
holidays.
1:28
>> Yes, she does.
1:29
>> And she wraps them up and she gives them
1:30
out to everybody. I mean, she makes lots
1:32
of loaves of it. And we get two
1:35
different ones. One with nuts and one
1:39
without. Now, can y'all guess which one
1:41
Thomas and I get?
1:44
I'll give you five seconds down in the
1:46
comments. She's the nutty one.
1:49
>> I like the nuts in my banana bread.
1:51
Thomas does not.
1:53
All right, got that all nice and mixed
1:56
together. We're going to add in two
1:58
eggs.
2:00
Now, I like to crack them into a
2:02
separate bowl and then add them from
2:03
there so I don't get shells inside.
2:08
one,
2:11
the leap across to the sink with a
2:13
shell.
2:18
And two, and then we're going to add
2:20
in/3 cup of sour cream,
2:27
one teaspoon of vanilla extract.
2:31
>> Do a Thomas pour.
2:33
>> Do y'all know what that is? Just keep
2:35
pouring.
2:37
>> There we go.
2:39
He likes that vanilla flavor in there.
2:41
Grab a whisk. Blend this all together.
2:45
Now, make sure the eggs are nice and
2:48
combined. That will give you a nice
2:50
uniform mixture here and it'll help rise
2:53
the muffins. Once you get all of that
2:56
nice and combined, bring over a medium
2:59
bowl. We're going to bring over
3:01
allpurpose flour and we're going to
3:04
measure out two cups.
3:08
Just dive deep into your flour. Just
3:11
take a knife and scrape off the excess
3:16
and add it to your bowl.
3:26
There we go. I'll be more careful this
3:28
time. One teaspoon of baking soda.
3:34
One teaspoon ground cinnamon.
3:37
That makes Thomas happy.
3:39
>> Mhm.
3:41
>> Half a teaspoon of baking powder.
3:45
And then we have half a teaspoon
3:48
of salt.
3:52
Now, what we're going to do is take a
3:54
whisk and we're going to blend this all
3:55
together till combined.
3:58
And help get out any of the lumps that
3:59
are in the flour.
4:02
Now, some of you are going to ask if you
4:04
can use self-rising flour. And yes, you
4:07
can in place of the allpurpose flour.
4:10
You just want to make sure you do not
4:11
add any salt or any baking powder. It's
4:15
muffin day and guess what Thomas's job
4:17
is today? Besides being behind the
4:19
camera,
4:21
he's got to do all the dishes. I'm going
4:23
to be running through a lot of muffins
4:25
today.
4:27
>> I'm going to be eating a lot of muffins.
4:30
>> They're going to a lot of people.
4:34
All right. Take your wet mixture, bring
4:36
it on over. That was with the bananas
4:38
and everything. And then we're going to
4:40
take the dry ingredients and we're going
4:42
to just push it into the banana mixture.
4:45
Just drop it on in there.
4:49
Don't use the whisk. Get you a spatula,
4:53
really flexible spatula, and you're
4:54
going to go in and we're going to fold
4:55
in the mixture into the flour and keep
4:57
going until everything is incorporated.
5:02
Now's a good time if you want to put any
5:04
add-ins into your banana muffins.
5:08
If you want walnuts or pecans or
5:11
chocolate chips, whatever you like in
5:13
there, we're going to keep it natural.
5:16
>> Mhm. And we're done with the mix right
5:18
here. Grab your muffin tins.
5:20
>> Yay.
5:21
>> I'm going to be using a 12 cup standard
5:24
size for my muffin tins here. Now, mine
5:27
come in six each right there. I'm just
5:30
placing them on a pan.
5:32
And then you want to spray them with
5:34
some non-stick cooking spray.
5:37
That way they come out.
5:43
There we go.
5:45
You can butter these also if you want to
5:47
do that.
5:49
I'm going to take a large a very large
5:51
scoop and we want to fill these up right
5:54
up to the rim.
6:00
Just like that.
6:04
I can see little bits of banana in
6:06
there.
6:14
There we go. Now, I did have to borrow
6:16
from a few of these just to add a little
6:18
extra to these two down there, but now
6:20
they're all equal. Now, I've got my oven
6:23
preheated at 425°.
6:25
We're going to pop these in the oven and
6:27
bake them for 5 minutes. We're going to
6:30
lower the temperature of the oven to
6:32
350°
6:35
and bake these for another 15 to 18
6:38
minutes. Now, they should be nice and
6:40
golden brown on top. nice pillowy
6:44
texture to the top. Also, take a
6:46
toothpick, put it inside of the muffin.
6:48
It should come out nice and clean with a
6:50
few crumbs. If it's still wet, put it
6:53
back in the oven for another 2 or 3
6:54
minutes. I'll be back.
7:01
Bring on fall and the holidays. Look at
7:05
these muffins. Now, when you pull them
7:07
out of the oven, you want to leave them
7:09
in the pan for about five minutes before
7:12
popping them out. Place them on a wire
7:14
rack and let them cool down another 10
7:16
minutes or so. That will help keep the
7:19
shape of your muffin. Look at this.
7:22
Let's break into it. I got to slather
7:24
some butter on it before I take a bite.
7:26
That's the way I eat a banana bread. All
7:29
right. And we're going to do it in
7:30
muffin form, too.
7:35
Oh.
7:39
Get that butter on there. It's still
7:42
nice and warm.
7:56
I went ahead and buttered that one, too,
7:57
cuz I knew who was going to come over
7:58
and get that. You
7:59
>> got that, right?
8:01
>> It's moist.
8:03
Got that banana flavor in there. It's
8:06
very pillowy on the inside and I love
8:09
the little crunchy on the outside a
8:11
little bit on the edges. That is good.
8:13
>> That's really good.
8:16
>> Mhm. That crunch on the outside.
8:19
>> Mhm.
8:19
>> Wow.
8:20
>> I like it.
8:22
>> Good.
8:23
>> Don't forget the butter.
8:25
All right, we're going to wipe this all
8:27
out of the way. Coming at you with the
8:29
chocolate. Double chocolate muffins.
8:32
That's what Thomas is here for. The
8:34
double chocolate muffins are going to be
8:36
the mini ones, but you can make the
8:39
original size also if you want to do
8:41
that. In a large mixing bowl, we're
8:44
going to start with the dry ingredients.
8:46
So, what you see right here is just
8:47
what's going to happen to these muffins.
8:49
Okay, we got one cup of allpurpose
8:52
flour.
8:56
We got 3/4 cup of white granulated
9:00
sugar.
9:05
And then we're going to put in half a
9:08
cup of unsweetened cocoa powder.
9:12
Now, this is the first chocolate going
9:15
into our double chocolate muffins here.
9:20
Yes, you do have to fit in chocolate
9:22
into your fall baking.
9:28
It's a given.
9:30
And then we're going to add in one
9:32
teaspoon baking powder.
9:36
Take a whisk and we're going to blend
9:39
this all together.
9:45
Get it good.
9:50
Love the smell of chocolate.
9:58
All right, that's what it should look
10:00
like right there. What we're going to do
10:01
is bring over a separate bowl just to
10:04
get the wet ingredients going.
10:08
And there's not that many. We're going
10:09
to start with two eggs.
10:16
Just going to go ahead and put them in
10:17
the bowl. And I'll just check really
10:20
quick for shells. Everything looks good.
10:23
Wipe my fingers.
10:28
Got half a cup of melted butter. I
10:32
cooled it slightly because of the eggs.
10:34
If you put hot butter into your eggs,
10:36
you're going to scramble them. You don't
10:38
want to do that. So, we put that in.
10:42
We're going to put in half a cup
10:46
milk.
10:49
And then we're going to add in one
10:51
teaspoon of vanilla extract.
10:55
I'm just going to
10:57
There we go.
11:01
And I'm going to take the same whisk
11:04
and I'm just going to blend this
11:06
together.
11:12
Yeah, this is an easy muffin recipe. All
11:15
of these are.
11:19
Got to get some baking done for the
11:21
fall, right? Might as well start off
11:23
with some delicious comfort and cozy
11:26
muffins that you can eat anytime.
11:30
All right, let's get the dry
11:32
ingredients.
11:35
Add the wet ingredients to the dry
11:37
ingredients. Just pour it on in.
11:47
Take a spatula and we're going to
11:48
combine them both.
11:52
And then we got to add that second
11:54
chocolate, which is chocolate chips,
11:58
whatever you like. I'm going to be
11:59
putting in semieet, about half a cup,
12:04
or you can put in up to a cup if you
12:07
like it really chocolatey.
12:10
So, before it gets too mixed, let's add
12:12
in the chips.
12:16
I'm going to estimate
12:23
That looks good right there. Now, we're
12:25
going to finish mixing this together
12:28
until just combined.
12:36
There we go. Let's go get our muffin
12:37
tin. Because I'm doing the minis, I'm
12:42
going to be using the small cookie
12:43
scoop. I've already sprayed my muffin
12:47
tin here. Now, there's 24
12:50
cups in here. So, I'm going to go into
12:52
my batter, pull it out,
12:56
and just plop it in there. Just like
12:58
that.
13:01
Now, tomorrow we're going over to
13:03
Rihanna's apartment, and I'm going to
13:05
bring her several of these different
13:07
varieties of muffins. Chris will be over
13:10
there, too. That's her boyfriend, so I'm
13:13
sure he'll enjoy these, too.
13:17
And then obviously I'll have to save
13:19
some for Joseph and Megan because if
13:22
they know that there were muffins and
13:23
they didn't get any, I don't know, they
13:26
may not come see me anymore. That'd be
13:28
sad.
13:30
They'll come over.
13:34
All right, I'm going to finish these up.
13:40
I've got my oven preheated at 350°.
13:44
Now, the mini muffins will only take
13:46
about 10 to 15 minutes. Remember the
13:49
toothpick test. Just put it through the
13:51
center and pull it out. Should be nice
13:52
and clean. If you're doing the original
13:55
standard size muffins for these, it'll
13:57
give you 12 of them. It'll take about 15
14:01
to 18 minutes, maybe two extra minutes.
14:04
Anyway, I'm going to put these in. I'm
14:05
going to first I'm going to take some of
14:06
the spray off the edging here so it
14:09
doesn't drip into my oven. I'm going to
14:10
be back. I'm going to show you the final
14:13
product and then we're going to start
14:14
the next muffin.
14:17
Here they are. Look at these little
14:19
gems.
14:20
Don't they look delicious?
14:24
Nice and warm and cozy. They just came
14:27
out of the pan a few minutes ago. And
14:29
what you want to do is when they come
14:30
out of the oven, once they're all the
14:33
way completely done, is leave them in
14:36
the pan for five minutes. So that way
14:38
they hold their shape. And then we're
14:39
gonna pop them out of the pan, put them
14:41
on a wire rack for just a few minutes,
14:43
and then enjoy these.
14:53
Here's my bite.
15:06
I like the little bits of chocolate
15:08
chips in there. That's delicious.
15:11
Spiced applesauce muffins. We got some
15:14
fall flavors in here for sure. This
15:17
recipe comes from my sister-in-law,
15:19
Donna, and it's real easy because we're
15:22
going to be using applesauce.
15:26
In a large mixing bowl, we're going to
15:28
place one stick of very soft butter or
15:31
half a cup. To the butter, we're going
15:34
to add in one cup of white granulated
15:37
sugar.
15:42
Now, Donna has tried this recipe and she
15:45
said she loved it.
15:51
We're going to crack in one egg.
15:57
We're going to add in one teaspoon of
15:59
vanilla extract.
16:05
Then we're going to cream this all
16:07
together. Just use your electric hand
16:08
mixer.
16:12
Get it nice and combined.
16:17
All right. Right when you get to this
16:18
right here, we're done.
16:23
To the batter, we're going to add two
16:24
cups of allpurpose flour.
16:34
We're actually going to add everything
16:36
else that we need.
16:40
And then we're going to add in apple pie
16:42
spice. Now, in her recipe, it had all
16:45
the spices listed separately, but I
16:48
combined it together.
16:50
And I'm going to use my apple pie spice
16:52
because it's the same spices. One and a
16:55
half
16:57
teaspoons of that.
17:01
Oh my goodness, that smells like fall.
17:04
Let's add it in.
17:09
That's one and then a half.
17:13
We're going to add in one teaspoon of
17:15
baking soda.
17:19
We need some moisture going on in there.
17:22
Unsweetened applesauce. We're going to
17:24
add one cup,
17:26
8 oz.
17:34
And we're going to take the hand mixer
17:36
again, blend this all together.
17:45
We want a nice smooth batter. Just take
17:49
a spatula and just go around and make
17:50
sure that everything is incorporated.
17:55
We're going to get our muffin tins.
17:57
We're going to spray them with some
17:58
non-stick cooking spray.
18:04
There we go. Just the 12 cup standard
18:06
muffin tins.
18:09
I'm grabbing my large scoop. I'm going
18:13
to go in.
18:17
We'll just plop those in.
18:23
This was muffin day for us today.
18:28
Let's see how much this makes.
18:35
Now, the recipe she gave me was a
18:37
doubled recipe.
18:41
And I really didn't want 24 muffins, so
18:45
I halfed the recipe.
18:48
There we go. All right. So, we got two
18:51
down there that we didn't fill.
18:54
I've got my oven preheated at 350°.
18:57
We're going to bake these for 15 to 20
19:00
minutes until we can get a toothpick
19:02
inside. Comes out nice and clean. I'll
19:05
be back.
19:07
We made it to the end. Got my spice
19:10
applesauce muffins, the double chocolate
19:14
mini muffins. Then we have the banana
19:17
bread muffins. Now I've tried these two.
19:20
Let's try the apple sauce muffin.
19:30
I try a bite for you.
19:42
Love that applesauce in there. Get a
19:45
really big taste of apple
19:47
and that spice in there. It tastes like
19:51
fall. It's nice and moist.
19:54
kind of crispy on the outsides, which is
19:56
how we like a muffin, right? All right,
20:02
thumbs up on these three, you guys. If
20:04
you're ready for fall, let me know down
20:06
in the comments. I have a good one
20:08
coming up for y'all pretty soon, so stay
20:10
tuned. All right,
20:13
make sure that you comment down below.
20:15
Hype the video, share it with anybody
20:17
you know wants a muffin for fall.
20:20
They're cozy, they're warm, and they're
20:23
delicious. I'll see y'all on the next
20:25
episode. Bye.
